Established in 1978 by Larry and Clara Hedrich; Chilton, Wi. Originally a commercial dairy producing goat milk and breeder of heritage goats for show, LaClare Family Farm didn't start producing cheese until 2008. As the show herd grew the Hedrich's began commercial dairy goat production and started shipping the milk in the spring of 1996. Some of this milk is marketed through the Quality Dairy Goat Cooperative of Wisconsin, of which Larry is the manager. The QDGPC supplies goat milk to other cheese makers including Carr Valley Cheese and Satori Cheese. It also provides grade A goat milk for bottling by Sunshine Distributions for Southern Wisconsin and the Chicago market. Current milk production involves milking 375 dairy goats year round. LaClare produces a wide range of products including cheeses made from raw and pasteurized whole milk, fresh cheeses like chevre, milks, cheese curds, caramel and soaps.
